Bursting with vibrant forest fruits and zesty orange, this coffee unfolds into smooth milk chocolate and rich caramel for a perfectly balanced finish.

The farm spans 10 manzanas (approximately 17 hectares) and yields between 30 to 35 quintals per manzana. It cultivates high-quality coffee varieties including IHCAFE 90, Lempira, and Parainema. The entire farm operates under a canopy of shade trees, promoting biodiversity and enhancing the quality of the coffee beans.

The coffee processing method is the honey process, known locally as “melado,” which requires no water usage. After harvesting the cherries at optimal ripeness, they are fermented for 15 to 20 hours. The cherries are then depulped and placed in clean sacks for an additional fermentation period of about 12 hours. Following fermentation, the beans are spread thinly—approximately 1 centimetre thick—on drying beds and dried in the sun for two days. They are then moved to a shaded drying tunnel for 25 days to complete the drying process. This meticulous method enhances the coffee’s unique flavours and characteristics.

Rita Herrera’s story in coffee begins four generations ago, when her family began producing coffee.

One of the most important aspects of her work is the conservation and protection of natural resources. She devotes a percentage of her land to the protection of the forest and fauna.

In 2019, she grew approximately 180 species of trees native to the area between the coffee trees, giving a home to birds including goldfinches and toucans. Rita Herrera’s land also has soil of volcanic origin, due to its proximity to the volcano.

Rita Herrera firmly believes that the volcanic soil, the altitude, the temperature, the amount of rain, the new varieties she is growing, combined with the love that her family puts into coffee, will lead her smallholding to produce very high-quality coffee.

Established in 2009, Kageyo 480 is situated in the fertile highlands skirting Lake Kivu in the west of the country. The smallholders grow coffee on small plots amongst the surrounding hills, where altitudes undulate between 1800 and 2000 meters.

They processed 67 tons of coffee cherries in 2010, and miraculously took 2nd place in the Cup of Excellence (COE) competition in Rwanda. In the following year, Kageyo won the 2011 competition, representing an incredible achievement for the co-op of farmer.

In 2013, Kageyo began working with Rwanda Trading Company (RTC) in order to market their coffees to overseas buyers more effectively. RTC also offered to help with Kageyo’s yield and production issues.

In 2015, RTC purchased Kageyo and eradicated the co-op’s debt to third party lenders, whilst crucially also keeping the co-op structure in tact. It is a relationship that goes from strength to strength.

Bolivia has an interesting coffee history and although it was exporting close to 85,000 bags in the early 2000s, Bolivian coffees almost disappeared at the end of the last decade. In 2018, only 23,300 bags were exported. A tiny portion of these were sold as Specialty grade.

Caranavi known as the capital of coffee is located in the lush forest of the Yungas region. In the 1950s, the government gave parcels of 10 hectares of tropical land to people and as a consequence, many people moved to Caranavi region and became farmers. This unique region has two climates and is home to the most fertile soil and consequently where the majority of coffee in Bolivia is produced nowadays.

Ndundu is producing outstanding and very reliable coffees due to their diligent control over each farmer practices to carry out all agronomic activities associated with high quality coffee production.

All coffee cherries are handpicked and are delivered to the mill the same day, where they will get rigourously sorted through floatation tanks, whilst factory employees oversee the process and any under ripe or damaged cherries will not be accepted by the “Cherry Clerk”, who keeps meticulous records of how much coffee each producer delivers on any given day and thus how much payment is due once the coffee has been sold.

You may have an observation that some baristas spray water to their dosed whole beans before grinding. The main reason for doing so is to reduce static thus less messy, plus considerably slow down the flow rate and increase extraction during brewing.

The idea is to avoid clumps, which are formed by the differently charged coffee particles, through neutralising the charge with water that leads to a more even distribution of fines, reduced channeling and therefore slower flow and higher extraction rates.
.
If you are going to try it, remember don’t get the beans too wet. About 2-4 sprays for 18-20g, depending on the grinder you use and how much static it produces. It’s also a good idea to gently shake the container to disperse the droplets amongst all the beans.
